What is Kimchi (pronounced "ch" like "cheese")?

Kimchi is the Korean national superfood.

Think of it as a funky spicy crunchy relish that makes everything you eat taste like you are in Gan Eden.

It's made from napa cabbage, garlic, ginger, green onion, and spicy Korean chili (gochugaru), then left to ferment until it’s tangy, crunchy, and alive. And it does not take "no" for an answer. It’s a probiotic powerhouse and one of the healthiest foods on the planet.  

Kimchi smells really bad. It is supposed to. Let it aerate for a sec, and it tastes incredible. Leave it in the fridge for weeks (if you can...) and let its taste deepen to enjoy a more mature flavor ;)

How do you eat it?

Think of Kimchi like a very versatile ketchup - put it on everything. Eggs, steak, schnitzel, deli, rice, cheese toasts, soups, stir fries...try it as your next vodka chaser! 

Certain types of people like eating it straight from the jar. 

Bottom line: kimchi goes with everything. Once you start, you’ll wonder how you ever ate without it.
